Preheat Oven Preheat the oven to 200°C.

Prepare Batter To prepare the batter, first mix the flour into the milk. Beat the eggs in a separate bowl and add them to the flour and milk mixture. Spice with salt and white pepper.

Bake Omelette Line a high-edged baking plate (or rimmed baking sheet) with greaseproof paper and pour the omelette batter onto the paper. Bake in the oven until light brown.

Overturn Omelette Overturn the baked omelette onto another piece of greaseproof paper and carefully peel away the paper from the bottom.

Cook Mushroom Filling Chop the onions for the filling. Fry the mushrooms in butter or oil. Add the chopped onions and cook until the liquid has nearly evaporated.

Season Filling Spice with salt and black pepper, and, if you like, add some basil or thyme. Check the taste. (Note: In case you prefer the filling to be more sauce-like, add a little cream or crème fraîche to the mixture and let it cook for a while).

Roll and Top Spread the mushroom mixture evenly over the omelette and roll the sheet up. Carefully move the roll onto a greased ovenproof plate and sprinkle grated cheese on top.

Final Bake Heat the omelette roll in the 200°C oven until the cheese is melted.
